The Kumato was developed in Europe by crossing the wild and domestic tomato.
It is extremely sweet because it is lower in acid than other tomato varieties. The strong distinctive taste changes as it moves through each stage of its life.
The green Kumato is firm, flavourful and slices beautifully, perfect for salads and sandwiches.
In its middle life, brown with hints of green, it has a more robust flavour. This is its ideal eating stage. It can be used for stuffing, pan roasting, sauces, chutneys and soups.
When it is fully ripened to deep brown and dark red it is soft and juicy, with a mild flavour, and best for cooking.
The Kumato boasts high levels of Vitamin C, Vitamin A, iron, calcium and lycopene, and is available from mid-August to late-May.
The Kumato is best stored at room temperature. Once fully ripe (dark red), they can be refrigerated for up to two days, but should be brought to room temperature before eating for the best flavour.
