The Indonesian dish Nasi Goreng is a traditional rice preparation, here combining chicken and prawns with shrimp paste.

Nasi Goreng is a very adaptable dish. Instead of shrimp paste, you can substitute a tablespoon of fish sauce. Also, you can add any vegetables you like, such as broccoli or carrots.

    • 1½ cups brown rice
    • 100 g prawns
    • 175 g chicken breast
    • 2 eggs
    • 1 spring onion
    • 1 clove garlic
    • 2 red chillies
    • 2 tsp shrimp paste
    • 1 Tbsp soy sauce

    • Chop the chicken breast into pieces, shell the prawns and slice them lengthwise.
    • Cook the rice.
    • Chop the garlic, spring onions, and chillis, then mix or blend them with the shrimp paste and half a tablespoon of oil.
    • Heat another tablespoon of oil and stir fry the mixture for several minutes, until it is fragrant.
    • Add the chicken, the soy sauce, and some pepper.
    • Cook over a medium heat for about 5 minutes. Be careful not to overcook the chicken.
    • Add the prawns and cook for a few more minutes, until the prawn flesh turns pink.
    • Turn the heat up and add one lightly beaten egg. Cook until the egg is set.
    • Fry the other egg in a separate pan.
    • Add the rice, stir until everything is mixed well, then add the fried egg on top.
