As a treat, you can simply coat them in chocolate. They keep well, and are a helpful addition to the school lunchbox.
1 packet of thin rice cakes
100gm dark chocolate
1 Tbsp butter
Spread the rice cakes out on a large cutting board or tray.
Melt the chocolate and butter in a heat proof bowl over a saucepan or double boiler.
Stir the mixture continuously until it is smooth.
Use a knife or spatula to spread the chocolate mix over the surface of the rice cakes.
Place in the fridge until the chocolate sets.
Store in an airtight container in the fridge, and take out as needed.
