Curried Rice Loaf

If you are serving rice to accompany a meal, this curried loaf can be an interesting variation.
- 1 small onion
- 1 small carrot
- 10 gm ginger
- Five spice powder
- Ground cloves
- ½ cup peas or beans
- ½ Tbsp curry powder
- ¼ cup raisins
- ¼ cup fruit chutney
- 1 cup cooked brown rice
- 3 small egg whites
- ¼ cup Carnation evaporated milk
- Preheat the oven to 180° or 160° fan forced.
- Chop the onion finely, and grate the carrot.
- Fry the onions, ginger, five spice and cloves in a little oil for a few minutes, until the onions are soft.
- Put the mixture in a large bowl, and add all other ingredients except the egg whites and evaporated milk.
- Whisk the egg whites for about 30 seconds, and mix in the evaporated milk.
- Add the egg white and milk mixture to the rice and mix together.
- Pour the mixture into a small loaf tin lined with baking paper, or sprayed with cooking oil.
- Bake for about 1 hour or slightly longer.

As with most rice dishes, it can also be eaten on its own, either hot or cold, so it goes just as well in the lunch box.
The vegetables are just a suggestion, of course you can vary the recipe to suit your own tastes.
This amount will serve three people.
