Fish Zucchini Teriyaki

Japanese Teriyaki dishes are named after the special sauce they are cooked in.

    “Teri” means gloss, and “yaki” means pan-fry. The sauce gives the meat a glossy shine, and the cooking method is to grill or pan-fry.

    Teriyaki dishes usually include noodles. This recipe, suitable for two people, substitutes zucchinis for a different effect.

    Preparation is quick and simple, and the meal can be cooked in only 5 or 6 minutes.


    • 2 fish fillets

    • 1 zucchini

    • 2 spring onions

    • 4 cherry tomatoes

    • 80g prawns

    • 1 tsp ground ginger

    • 2 Tbsp soy sauce

    • 1 Tbsp honey

    • ½ Tbsp apple cider vinegar


    • Spiralise the zucchini into ribbons like noodles.

    • Cut the tomatoes into quarters.

    • Mix chopped spring onions with the ginger, soy sauce, honey, and vinegar.

    • Fry the fish in the sauce for three minutes.

    • Add the zucchinis, tomatoes, and prawns, and fry for another three minutes.
