Thai Beef Mince With Mint And Coriander

This recipe, accompanied with rice or noodles and leafy greens, provides a quick and nutritious family serve.

    Thai beef mince with carrot, mint, coriander and spring onion, with cauliflower rice and bok choy


    It is also suitable for freezing, so it is convenient to make a large quantity and divide into portions for when cooking time is limited.


    • 500g beef mince

    • 4 small-medium carrots

    • 1 brown onion

    • 2 garlic cloves

    • 2cm fresh ginger

    • 2 spring onions

    • Juice of a lime

    • 1 or more red chilli

    • 1 handful mint

    • 1 handful coriander

    • 2 Tbsp tamari or soy sauce

    • 1 Tbsp olive oil


    • Finely chop the garlic and onion, and grate the ginger and carrot.

    • Chop the spring onions, mint and coriander.

    • Put the beef mince in a bowl and stir in the lime juice.

    • Heat the oil in a frying pan over medium heat.

    • Add the garlic, ginger and onion.

    • When they start to soften, add the beef.

    • When the beef starts to brown, add the carrots and chilli.

    • Once the beef is cooked through, remove it from the heat.

    • Now stir through the spring onions, mint, coriander and tamari.
