Thai Chilli Beef Noodles

This recipe takes very little time to prepare or cook. You just have to allow an hour or so to marinate the beef.



    The amount of chilli makes this dish low to medium hot. Add more chilli if it suits your taste.

    The ingredients will make enough to serve two people.


    • 250 g sirloin steak
    • About 85 gm rice stick noodles
    • 1 Tbsp oil
    • Lemongrass
    • 1½ Tbsp soy sauce
    • 2 cloves garlic
    • Ginger
    • ¾ Tbsp fish sauce
    • 2 small chillis
    • Juice of ¾ lime


    • Combine the soy sauce, fish sauce, garlic, ginger, chilli and lime juice with about 1½ tsp oil to make the marinade.
    • Process the marinade in a blender until smooth.
    • Cut the steak into thin strips, place in a shallow bowl, and pour the marinade, turning the steak to coat it thoroughly.
    • Leave to sit for at least an hour.
    • Cook or soak the noodles, then drain and rinse under cold water.
    • Heat a wok or frypan until it is hot, and add the oil.
    • Add the lemongrass, then the beef and marinade.
    • Stir fry this for no more than 1 to 2 minutes.
    • Add the cooked noodles, and toss until they are heated through.
    • Serve sprinkled with chopped coriander.
