It takes a bit of work to prepare these spicy chicken pastry rolls, but they are great for snacks or parties, and can be eaten hot or cold with a chilli dip.

The ingredients are enough to make 8 pieces.

    • 130 g shredded cooked chicken

    • ½ cup self raising flour

    • ½ cup plain flour

    • 15 g butter

    • milk

    • 70 g Cream cheese

    • 2 Tbsp Thai green curry paste

    • ½ cup spring onions

    • 1 Tbsp chopped coriander

    • Preheat the oven to 200°, or 180° fan forced.

    • Mix butter into the flour in a bowl with your fingers, until it resembles bread crumbs.

    • Add milk a little at a time, mixing it to a sticky dough.

    • Knead this on a floured board or the kitchen bench.

    • Roll the dough into a rectangular sheet, making it as thin as possible.

    • Spread the sheet of dough on baking paper on a baking tray.

    • Spread the cream cheese over the rectangle.

    • Mix the chicken, curry paste, and finely chopped spring onions.

    • Spread the chicken mixture over the cream cheese.

    • Roll the sheet from the long side, to make a log.

    • Slice the log into sections about 2 cm wide, keeping the log intact.

    • Bake for about 15-20 minutes or until golden brown.
