Vietnamese Tofu Pho

Pho is the best known traditional Vietnamese soup.

    This recipe is suitable as a vegetarian dish for 4 people. As a variation, you can add prawns or shredded chicken breast (cooked in advance).

    Ingredients

    • 350g firm tofu
    • 2 stalks lemongrass
    • 2 tsp grated ginger
    • 4 kaffir lime leaves
    • 1½ litres vegetable stock
    • 1 tsp palm sugar
    • 3 Tbsp fish sauce
    • 1 lime
    • 50g bean sprouts
    • 2 carrots, finely sliced
    • ½ orange, juiced
    • 3 Tbsp soy sauce
    • 1 Tbsp honey
    • red chilli
    • basil
    • coriander

    Method

    • Make a marinade by mixing the juice of half an orange with the soy sauce and honey.
    • Slice the tofu into 8 pieces, place them in a dish, and pour the marinade over.
    • Set it aside for one hour. After half an hour, turn the tofu pieces over.
    • Chop the lemongrass and lime leaves, then grind them with the ginger in a mortar and pestle to make a paste.
    • Fry the tofu slices over a medium-high heat for 1-2 minutes on each side.
    • Combine the stock and paste in a large saucepan, and boil for 10 minutes.
    • Add the sugar, fish sauce, lime juice and carrot slices, and cook for a few more minutes.
    • Remove from the heat and add the fried tofu, bean sprouts, chilli and herbs.
